We all know rice and beans are Dave Ramsey's solution to save money on your grocery bill! This recipe adds some additional protein from the ground beef, and everything is cooked in a deliciously seasoned tomato sauce.
Budget Meals
This recipe is part of my week 11 budget meal series, where I planned five meals for under $60. The weekly recipes and shopping lists are just $1.59, and can be purchased here.
Ingredients
- 2 cups jasmine rice
- 4 tablespoons butter
- 4 cups water
- 1 (8 oz.) can of tomato sauce
- 1 can of petite diced tomatoes
- 3 teaspoons Knorr tomato bouillon
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 can of drained and rinsed black beans
- 1 pound ground beef
Directions
- In a large skillet, brown the ground beef and season it with 1 teaspoon of salt and ½ teaspoon of black pepper. Remove the beef from the skillet, draining any excess grease.
- In the same skillet, melt the butter and then add the jasmine rice. Allow the rice to get toasty and golden while cooking in the butter over medium heat, stirring frequently. This should take 2-3 minutes.
- Pour in the tomato sauce, add the Knorr seasoning, the remaining salt, and pepper, and then add the water. Stir well and bring the liquid to a boil.
- Once it comes to a boil, turn off the burner and allow it to sit covered for about 20 minutes or until the rice is cooked and fluffy.
- Finally, stir in the drained black beans, the cooked ground beef, and the petite diced tomatoes. Top with some freshly chopped cilantro!
Tips and Tricks
If you need to reduce the cost of this meal consider omitting the beef and adding in an extra can of black beans.
The dish would also pair great with taco favorites like sour cream, shredded cheese, jalapenos, or a squeeze of fresh lime.

Spice up this recipe with shredded cheese, sour cream, jalapenos, lime juice, or anything else you can think of. It's hard to screw this one up!
